Tomato in White Bean Soup accented with Chipotle Spice Blend
Beans, Northern or Navy, dry
picked and rinsed
diced tomatoes (can)

RFS Smooth & Mellow
Place the turkey tail and 3 quarts of water into a covered 5 qt pot.
Set on medium high heat for 1½ hours (add 1 or 2 cups of water after one hour to offset evaporation).
Add white beans, RFS Smooth & Mellow blend and salt.
Reduce heat to medium and cook for 1½ hours. Stir beans every twenty minutes and occasionally provide more water to keep beans covered (Dried beans will absorb seasoned stock).
With the back of a large cooking spoon mash the soft cooked beans in the 5 qt. pot to thicken the bean soup stock.
Drain diced tomatoes and add into beans.
Cook on medium heat for ½ hour.
Serve with hot corn bread
